I noticed API.AI supports italian, and I have created an italian speaking assistant. But the Google Assistant apparently doesn't support italian at all, so the output is mispoken. Is there a specific timeframe for when will more languages be supported by the Google assistant?

Forgive me if I missed this, but what if I want it to skip over a parameter? For instance, let's say I ask it "What can I make with beef and pasta?". It will still ask me what sort of vegetables I want to add, even though I'd only mentioned hotwords defined under the protein and pasta categories. Can I have it ignore the unmentioned parameters?

Nice overview of concepts. Is there another video to finish of this example – so a web-hook to a service (if one exists?) that takes ingredients and throws back real dishes?
